This recipe for Chocolate Chia Pudding contains ZERO sugar, gluten or dairy and as such, it is perfect for our paleo tribe and dedicated vegans and vegetarians. Oh and did I mention… it tastes AH-MAZING?!!

How can Chocolate Pudding be good for you?

Chia seeds make the best snack on the go and are packed full of nature’s goodness. Not only are Chia seeds rich in protein, they also contain high doses of omega 3 ALA, iron and potassium. Chia seeds also contain 5 times more calcium than milk and 7 times more vitamin C than oranges!

I have also added some delicious cacao powder for that chocolatey flavour. It’s packed full of goodness including extraordinary high levels of magnesium, chromium and iron in addition to having one of the highest levels of antioxidants in any food source!

Chocolate Chia Pudding

Ingredients

Scale
  • 2 tbsp cacao powder
  • 1/3 cup chia seeds
  • 1 tsp vanilla powder
  • 2 organic fresh dates seeds removed (or a drop of two of stevia to taste)

Instructions

  1. Place all ingredients in a food processor and process until combined.
  2. Let the mixture sit for a few minutes serving (approx 20 minutes)Transfer to small serving bowls and top with cacao nibs.
  3. If the mixture becomes too dry, add some more coconut milk and stir to combine before serving.
