My Go-To Snack When I Have Zero Time


Ingredients

Units Scale
  • 4 medium ripe avocados, halved and pitted
  • 1/2 small finely chopped red onion
  • 1/4 cup finely chopped fresh coriander
  • 1 1/2 limes, juiced
  • 1/4 tsp ground coriander
  • 1 pinch chilli flakes (optional)
  • 1 tsp celtic sea salt

Instructions

  1. Using a spoon, scoop the flesh of the avocados into a bowl. Using a fork, mash up the avocado until it reaches your desired texture. 
  2. Promptly add the onion, coriander, lime juice, coriander, salt and chilli flakes. Stir to combine. Taste and add additional salt or a little more lime juice if required.
  3. Serve with vegetable crudités (fancy name for chopped vegetables) or brown rice crackers.
