Another quick and simple way to boost your vegetable intake with minimal fuss. 

  • 85g pine nut, toasted
  • 85g parmesan cheese
  • 2 cloves garlic
  • 150ml extra-virgin olive oil, plus extra to serve 
  • 85g kale 
  • Juice 1 lemon

Put all ingredients in a blender and process until smooth. Season with salt and pepper before stirring through zucchini pasta or spreading over your cauliflower pizza base.
