White Christmas Incrediballs

Ingredients

  • 1 cup macadamia nuts
  • 1 cup almonds
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots
  • 1 tsp vanilla extract/powder (optional)
  • 2 tbsp. of coconut oil (I use Loving Earth)
  • 1 cup desiccated coconut for rolling

Instructions

  1. In a food processor add nuts, dried fruit, vanilla (optional) and coconut oil. Process on high for approximately 10 seconds or until mixture is malleable.
  2. Take a small portion (just shy of 1 tbsp.) of the mixture and roll into a ball using your hands and set aside. Repeat "ball rolling" until all of the mixture has been used.
    NOTE: If the mixture doesn't hold together well, return it to food processor and add another tsp. of coconut oil before processing for another 5-10 seconds.
  3. Once ball rolling is complete, pour the desiccated coconut onto a large dinner plate. Roll each ball in the desiccated mixture to coat.
  4. Transfer all finished incredi-balls to a large clean plate or board. Pop in the freezer to set. This should take about 20 minutes.
  5. Store in the freezer or refrigerator until ready to serve.

Notes

  1. Always ask your local health food store for sulphite free apricots and other dried fruit. 
  2. If you want a “whiter” Christmas ball, opt for blanched or slivered almonds over whole almonds.
