Make Your Own Coconut Milk
  • 4 cups / 800g hot filtered water (not boiling, just hot)
  • 2 cups / 200g of unsweetened shredded coconut
  1. Place the shredded coconut in the Thermomix or blender

  2. If you are using a Thermomix, blend on speed 8 for 30 seconds, if you are using a blender, blend on high for around a minute; or until it is thick and creamy

  3. Strain the mixture through a muslin cloth (or cheesecloth available from fabric stores for half the price), squeezing out all excess liquid.

  4. Place in an airtight glass-jar in the refrigerator for 3-4 days. You might find that the coconut cream will separate from the coconut milk, this can be easily blended back through for a creamy milk, or scooped off the top for use in a number of recipes.
