Pumpkin Soup

Ingredients

  • 1 brown onion (diced)
  • 1 tbsp grass fed butter
  • 450 g pumpkin (peeled and diced)
  • 1 large carrot (peeled and diced)
  • 1 L chicken stock
  • 1/2 cup coconut milk or cream ((cream will make it thicker than milk))

Instructions

  1. In large pot, sauté brown onion in butter until golden.
  2. Add diced pumpkin, carrot and chicken stock, to the pot, bring to boil before reducing heat to low-medium. Allow to simmer for 20-25mins or until carrot has softened.
  3. Remove from heat, add coconut milk to the pot & purée.
  4. Serve whilst hot!
