Paleo Chocolate Chip Cookies


I was playing in the kitchen the other day and I came up with these tasty little Paleo Chocolate Chip Cookies. Like all my recipes, they are so easy to make and are ready in less than 15 minutes. 

By using Almond Meal, these cookies are 100% gluten free. They are also free from dairy (depending on which chocolate you use) and any refined sugar. What’s not to love?

Paleo Chocolate Chip Cookies

Ingredients

Units Scale
  • 1 1/2 cups almond meal
  • 3 tbsp coconut oil (melted)
  • 2 tbsp Honey/Maple Syrup/Rice Malt Syrup
  • 1 tsp vanilla extract
  • 1 tbsp almond milk ((more if mixture is too dry))
  • 1/4 tsp baking soda
  • 40 g dark chocolate ( chopped into tiny pieces)

Instructions

  1. Preheat oven to 180C. Line a baking tray with baking paper.
  2. Combine all ingredients in a large bowl and mix well.
  3. Take a tablespoon of the mixture and roll into a ball, transfer onto baking paper and flatten ever so slightly to resemble a cookie shape. Repeat until mixture is finished, spacing cookies at least 3cm apart on the baking tray.
  4. Place tray of cookies in the oven for 10 minutes, or until lightly golden.
  5. Remove from the oven and set aside to cool before serving.

    I absolutely LOVE these cookies! Made them twice and probably going to make some more today! They’re that good! When I make mine I don’t use almond meal, I blend macadamias, almonds, and cashews to form small chunky pieces. Makes them super crispy in the oven!
