Let’s face it, eating salads day in and day out can get a little repetitive. That’s why I’ve developed a range of salad dressings to help you spice things up. Feel free to prepare a big batch at the start of the week and store in an air-tight glass jar in the fridge.

Ingredients

MACADAMIA, LEMON & HONEY

  • 1/4 cup macadamia oil
  • 1/4 cup lemon juice
  • 2 tbsp honey
  • 2 tbsp finely grated lemon zest (optional)

HERB VINAIGRETTE

  • 1/4 cup olive oil
  • 2 tbsp white wine vinegar
  • 1 tbsp finely chopped mint
  • 1 tbsp finely chopped flat leaf parsley
  • 1 tbsp honey

CREAMY AVOCADO

  • 1 ripe avocado
  • Juice of 1 large lime
  • 1 generous tbsp Natural Coconut Yoghurt

RASPBERRY DRESSING

  • 150g raspberries (fresh or frozen)
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp honey (optional)

HONEY, LEMON & MUSTARD

  • 1/4 cup lemon juice
  • 1/4 cup extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 clove garlic, grated (optional)

CREAMY MINT & LIME

  • 1/4 cup extra virgin olive oil
  • 1 lime juiced
  • 1 cup fresh mint leaves
  • 1/2 ripe avocado, (seed and skin removed)
  • 1 tbsp honey (optional)

MEXICAN SALAD DRESSING

  • 1/4 cup olive oil
  • 1 tbsp lime juice
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 1/2 tbsp celtic sea salt
  • 1 crushed garlic clove
  • 2 tbsp crushed coriander
  • 1 tbsp ground cumin
  • Pinch cayenne pepper

Instructions

MACADAMIA, LEMON & HONEY

  1. Whisk all ingredients together in a small bowl. Pair with grilled chicken and/or green salad.

HERB VINAIGRETTE

  1. Pop all ingredients together in a small jar and shake well to combine. This dressing pairs perfectly with green salads.

CREAMY AVOCADO

  1. Whisk all ingredients together in a small bowl. This recipe pairs beautifully with rainbow slaw, Mexican food and sweet potato.

RASPBERRY DRESSING

  1. Combine all ingredients in a food processor, pulse until combined. Pairs beautifully with any salad that accompanies an animal protein source.

HONEY, LEMON & MUSTARD

  1. Combine all ingredients in a small jar, shake well to combine. Serve with any salad – I personally love this one with legumes i.e. chickpeas etc.

CREAMY MINT & LIME

  1. Whisk all ingredients together in a food processor. If you find the mixture is too thick, thin to desire consistency using 1 tsp. of water or lime juice at a time. Pair with a potato salad.

MEXICAN SALAD DRESSING

  1. Combine all ingredients in a small bowl. Whisk together to combine. Pair with Mexican inspired dishes i.e. black bean, avocado and corn salad.
