SO I left my car keys in my husband’s car this morning and consequently missed my morning Pilates class (insert crying emoji). So instead of getting all danny depressing, I decided to use the extra time to make the most delicious “An Apple a Day” Blueberry Choc Smoothie. 

Why is it good for me? 

There are a number of studies that link cacao to a wide range of health benefits. Not only is cacao rich in nutrients like magnesium, iron, zinc and copper, it has also been known to the management of blood pressure, insulin resistance and cardio vascular disease. It’s no secret that blueberries are rich in antioxidants that help fight free radical cell damage to our cell structures and DNA, but that’s not all these berries are capable of. Research has also suggested that they can help improve memory, help fight cancer, improve heart health, improve brain health and are rich in vitamin C (containing up to 25% of your RDI in one serve). 

By adding full fat coconut milk to your smoothie, you are reducing the effects the natural sugars (found in the fruit) will have on your blood sugar levels. This not only helps prevent a blood sugar spike, but helps keep you fuller for longer. You can make your own coconut milk by following this recipe here

Blueberry Choc Smoothie 

A delicious and nutritious way to fill your tummy.


  • 1 cup full fat coconut milk
  • 1/2 cup filtered water
  • 1/2 cup frozen blueberries
  • 1 small frozen banana
  • 2 tsp. cacao nibs
  • 2 tsp. cacao powder (for extra magnesium!)


  1. Whack it all in your blender and process until smooth and creamy.
  2. Top this deliciousness with some fresh blueberries and a sprinkle of chia seeds.
