Cauliflower Rice

Is there anything cauliflower can’t do? Not really. Today I share my quick and simple recipe for Cauliflower rice. It pairs perfectly with my delicious paleo thai green curry. 


Cauliflower Rice 


Serves: 4        Prep Time: 5 Min        Cook Time: 5 Min


Ingredients:

  • 1 head of cauliflower (large), chopped coarsely
  • 1 tbsp. coconut oil
  • Celtic sea salt and pepper to taste

Instructions:

  1. In a food processor or Thermomix, chop the cauliflower florets until they resemble a grain like texture (pictured above).
  2. In a pan over medium heat, melt the coconut oil and add the cauliflower “rice” to the pan. Sauté for 5 minutes or until the cauliflower has softened, stirring often. Add salt and pepper before serving immediately.

Notes:

Too add some extra flavour, I like to add chopped onion or garlic to the mix. The possibilities are endless.
