Barbecued Steak with Grilled Asparagus & Sweet Mustard Dressing

This barbecued steak with grilled asparagus and sweet mustard dressing has to be one of my favourite summer recipes – it really is a game changer!  Not only is it simple, time-effective it’s also a crowd pleaser, being both nutritious and delicious.


WHAT’S SO GOOD ABOUT IT? 

ASPARAGUS

Asparagus is a summer vegetable that is a great source of fibre (good poos) , folate (healthy hormones amongst MANY other things), vitamins A, C, E and K, as well as chromium (a trace mineral that is used to support healthy blood sugar regulation).

STEAK

Red meat provides the body with heme iron, a form of iron that is much more easily absorbed by the body than non heme iron (found in plant based products). Steak also supplies the body with a source of vitamin B12, which helps make DNA and keeps nerve and red blood cells healthy, and zinc, which keeps our skin healthy and the immune system on it’s toes.

OLIVE OIL 

Olive oil is a wonderful source of antioxidants that have been linked to the prevention of chronic diseases. It also has wonderful anti-inflammatory properties known to reduce inflammatory markers such as C-Reactive Protein in controlled trials. But it has to be the right kind! Are you buying the best olive oil available? And more importantly, are you storing it correctly?

Barbecued Steak with Grilled Asparagus & Sweet Mustard Dressing

Description

One of my favourite summer recipes – this barbecued steak with asparagus is simple, time-effective, nutritious and delicious.


Ingredients

Units Scale
  • 500 g grass-fed steak
  • 1/2 tsp. ground coriander
  • 1/2 tsp. Himalayan rock salt
  • 3 bunches of asparagus
  • Snow pea sprouts and rocket to serve
  • Salt and pepper to taste
  • 1/4 cup extra virgin olive oil
  • 1 tbsp. red wine vinegar
  • 1 tbsp. Dijon mustard
  • 1 spring onion (finely chopped)
  • 1 tsp. rice malt syrup (honey or maple)

Instructions

  1. In a small bowl, combine all dressing ingredients and mix well. Set aside.
  2. Heat a lightly oiled barbeque grill plate over high heat. Add steaks. Cook for approximately 5 minutes each side, turning only once.
  3. Remove steaks from grill and set aside for 3-5 minutes to rest. Dust with coriander and salt. Slice steak into thick strips.
  4. On the same grill plate, place asparagus. Cook for 3-5minutes or until lightly charred. Remove from heat.
  5. Place asparagus on plate and top with steak strips and greens. Drizzle with dressing.
