As the weather gets a little warmer, I start to crave that lighter, crispier texture of a salad. To help satisfy this craving, I decided to whip together an old favourite for lunch today – my pomegranate. fennel and goat’s cheese salad. It’s so simple to throw together and tastes freaking amazing. Perfect to pair back with… well, anything really! I even like to enjoy it on it’s own.
Looking for some quick and easy dinner inspiration? Today at ‘An Apple a Day’ HQ, we strayed from our usual recipe and whipped up this version in next to no time. After we devoured our servings, we realised It was too good not to share! Enjoy x
As you all know, Andrew and I recently took a trip to Italy. It was here I fell in love with so many incredible tastes and flavours, one of which includes the delicious eggplant parmigiana (oh em gee, I’m salivating even righting this post!). With eggplants, basil and tomatoes coming into full season, I thought that this would be the PERFECT opportunity to share this delicious dish. Trust me when I tell you that you are going to want to make double – it’s that yummy.
I don’t know about you, but to me, there is nothing better than a warm soup on a chilly winter’s day and this carrot and red lentil soup is one of my favourites. This soup is incredibly simple, oh so delicious and of course rich in real-food goodness.
